LAJAWAAB LAUKI KI SABZI

INGREDIENTS

  • Lauki/Bottle gourd – 1 medium sized
  • Tomatoes – 3 (chopped)
  • Potato – 1 medium sized ( grated)
  • Ginger – 1 inch piece (grated)
  • Green chillies – 2-3
  • Jakhya/Jeera – 1 tsp
  • Bay leaf – 1
  • Turmeric powder – 1 tsp
  • Red chilli powder – 1 tsp
  • Roasted cumin seed powder – 1tsp
  • Kashmiri red chilli powder – 1tbsp
  • Coriander powder – 1 tbsp
  • Besan/ chick pea flour – 1tbsp
  • Dried frnugreek leaves/ Kasuri methi – 1tbsp
  • Garam masala powder – 2-3 pinches

PROCEDURE

  • Put a pressure cooker in flame.Once it gets heated add jakhya or jeera,grated ginger & green chillies. Saute for few seconds.
  • Now goes chopped tomatoes, saute for 1 minute in medium flame.
  • Add all spices (not garam masala), besan & Kasuri methi in lower flame & saute till tomatoes turn soft and mushy.(If needed you can also add a dash of water ).IMG_20180804_125450.jpg
  • Now add lauki and grated potato, saute for 3-4 minutes in lower flame.IMG_20180804_125623.jpg
  • Add water carefully as lauki also leaves water while cooking.IMG_20180804_130004.jpg
  • Add salt and garam masala, stir and cover the cooker with lid.
  • Bring first whistle in high flame then lower the flame and let it stew for 5 minutes.
  • Garnish with chopped coriander leaves.
