KHATTA-MEETHA KADDU

Ingredients

  • Pumpkin/Kaddu – 250gm ( peeled )
  • Fenugreek seeds/Methi dana – 1tsp
  • Carom seeds/Ajwain – 1tsp
  • Green chilies – 2
  • Dry kashmiri chillies – 2
  • Turmeric powder – 1tsp
  • Roasted cumin powder – 1tsp
  • Red chilli powder – 1tsp
  • Dry mango powder – 1tbsp
  • Jaggery – 2tbsp (approx.)
  • Salt to taste
  • Cooking oil – 2tbsp

Procedure

  • Put a wok on medium flame.
  • Add oil & let the oil heat properly.
  • Add methi dana,ajwain,green and red chilies.Saute for few seconds on low flame.

  • Now add chopped pumpkin & salt. Mix well.
  • Cover pan with lid and fry in low-medium flame for 2-3 minutes.
  • Add all spices & cover pan with lid.
  • Saute in low flame 10 minutes or until pumpkin becomes tender.Keep stirring in between.
  • Add jaggery.

  • Cover and saute for 2 minutes more.
  • Mash the mixture.

  • Dish is ready.
